Cannabis in the Kitchen: Two Simple Homemade Infused Desserts
Spiced Milk Drink (Leche Rizada)
Ingredients:
· Whole milk
· 2 drinkable mixed-fruit yogurts
· 10 grams of cannabis flowers (finely ground into powder)
· Ground cinnamon and sugar
Set up a double boiler over gentle low heat without a lid. Pour in the whole milk; once warm, add the finely ground cannabis, stirring steadily every 5 minutes for approximately 20 minutes (taking care never to let it boil): excessive boiling degrades delicate THC cannabinoids. Pour in the two drinkable fruit yogurts, blend thoroughly, and heat for another 10 minutes until well infused. Sprinkle generously with cinnamon, let cool, and refrigerate.
Andrea Shortbread Biscuits
Ingredients:
· 150 g butter
· 75 g powdered confectioner’s sugar
· 1 egg yolk
· 1 whole egg
· ½ teaspoon lemon zest extract
· ¼ teaspoon vanilla extract
· 50 g ground almonds
· 500 g all-purpose baking flour (as needed for dough consistency)
· 10 g cured cannabis flowers
Place all ingredients into a food processor or mixer except the flour and cannabis flowers, blending thoroughly until the butter is completely incorporated. Slowly add the flour while mixing; once the dough has absorbed almost all the flour, incorporate the cannabis flowers—either finely chopped or whole, as the blades will pulverize them evenly into the dough. Once the dough reaches uniform consistency, shape into individual cookies or rounds. Decorations may be applied before or after baking. Preheat the oven to 200–210 °C; the biscuits bake to a golden finish in approximately 7–10 minutes.
